Asian American Food Culture by
Covering topics ranging from the establishment of the Gulf Coast shrimping industry in 1800s to the Korean taco truck craze in the present day, this book explores the widespread contributions of Asian Americans to U.S. food culture. Since the late 18th century, Asian immigrants to the United States have brought their influences to bear on American culture, yielding a rich, varied, and nuanced culinary landscape. The past 50 years have seen these contributions significantly amplified, with the rise of globalization considerably blurring the boundaries between East and West, giving rise to fusion foods and transnational ingredients and cooking techniques. The Asian American population grew from under 1 million in 1960 to an estimated 19.4 million in 2013. Three-quarters of the Asian American population in 2012 was foreign-born, a trend that ensures that Asian cuisines will continue to invigorate and enrich the United States food culture. This work focuses on the historical trajectory that led to this remarkable point in Asian American food culture. In particular, it charts the rise of Asian American food culture in the United States, beginning with the nation's first Chinese "chow chows" and ending with the successful campaign of Indochina war refugees to overturn the Texas legislation that banned the cultivation of water spinach--a staple vegetable in their traditional diet. The book focuses in particular on the five largest immigrant groups from East and Southeast Asia--those of Chinese, Japanese, Korean, Filipino, and Vietnamese descent. Students and food enthusiasts alike now have a substantial resource to turn to besides ethnic cookbooks to learn how the cooking and food culture of these groups have altered and been integrated into the United States foodscape. The work begins with a chronology that highlights Asian immigration patterns and government legislation as well as major culinary developments. The book's seven chapters provide an historical overview of Asian immigration and the development of Asian American food culture; detail the major ingredients of the traditional Asian diet that are now found in the United States; introduce Asian cooking philosophies, techniques, and equipment as well as trace the history of Asian American cookbooks; and outline the basic structure and content of traditional Asian American meals. Brown Skin, White Minds by
Filipino Americans have a long and rich history with and within the United States, and they are currently the second largest Asian group in the country. However, very little is known about how their historical and contemporary relationship with America may shape their psychological experiences. The most insidious psychological consequence of their historical and contemporary experiences is colonial mentality or internalized oppression. Some common manifestations of this phenomenon are described below: -Skin-whitening products are used often by Filipinos in the Philippines to make their skins lighter. Skin whitening clinics and businesses are popular in the Philippines as well. The "beautiful" people such as actors and other celebrities endorse these skin-whitening procedures. Children are told to stay away from the sun so they do not get "too dark." Many Filipinos also regard anything "imported" to be more special than anything "local" or made in the Philippines. -In the United States, many Filipino Americans make fun of "fresh-off-the-boats" (FOBs) or those who speak English with Filipino accents. Many Filipino Americans try to dilute their "Filipino-ness" by saying that they are mixed with some other races. Also, many Filipino Americans regard Filipinos in the Philippines, and pretty much everything about the Philippines, to be of "lower class" and those of the "third world." The historical and contemporary reasons for why Filipino -/ Americans display these attitudes, beliefs, and behaviors - often referred to as colonial mentality - are explored in Brown Skin, White Minds. This book is a peer-reviewed publication that integrates knowledge from multiple scholarly and scientific disciplines to identify the past and current catalysts for such self-denigrating attitudes and behaviors. Inscrutable Belongings brings together formalist and contextual modes of critique to consider narrative strategies that emerge in queer Asian North American literature. Stephen Hong Sohn provides extended readings of fictions involving queer Asian North American storytellers, looking to texts including Russell Leong's "Camouflage," Lydia Kwa's Pulse, Alexander Chee's Edinburgh, Nina Revoyr's Wingshooters, and Noël Alumit's Letters to Montgomery Clift. Despite many antagonistic forces, these works' protagonists achieve a revolutionary form of narrative centrality through the defiant act of speaking out, recounting their "survival plots," and enduring to the very last page. These feats are made possible through their construction of alternative social structures Sohn calls "inscrutable belongings." Collectively, the texts that Sohn examines bring to mind foundational struggles for queer Asian North Americans (and other socially marginalized groups) and confront a broad range of issues, including interracial desire, the AIDS/HIV epidemic, transnational mobility, and postcolonial trauma. In these texts, Asian North American queer people are often excluded from normative family structures and must contend with multiple histories of oppression, erasure, and physical violence, involving homophobia, racism, and social death. Sohn's work makes clear that for such writers and their imagined communities, questions of survival, kinship, and narrative development are more than representational--they are directly tied to lived experience.

Repetition and Race explores the literary forms and critical frameworks occasioned by the widespread institutionalization of liberal multiculturalism by turning to the exemplary case of Asian American literature. Whether beheld as "model minorities" or objects of "racist love," Asian Americans have long inhabited the uneasy terrain of institutional embrace that characterizes the official antiracism of our contemporary moment. Repetition and Race argues that Asian American literature registers and responds to this historical context through formal structures of repetition. Forwarding a new, dialectical conception of repetition that draws together progress and return, motion and stasis, agency and subjection, creativity and compulsion, this book reinterprets the political grammar of four forms of repetition central to minority discourse: trauma, pastiche, intertextuality, and self-reflexivity. Working against narratives of multicultural triumph, the book shows how texts by Theresa Cha, Susan Choi, Karen Tei Yamashita, Chang-rae Lee, and Maxine Hong Kingston use structures of repetition to foreground moments of social and aesthetic impasse, suspension, or hesitation rather than instances of reversal or resolution. Depictions of Asian American men as effeminate or asexual pervade popular movies. Hollywood has made clear that Asian American men lack the qualities inherent to the heroic heterosexual male. This restricting, circumscribed vision of masculinity--a straitjacketing, according to author Celine Parreñas Shimizu--aggravates Asian American male sexual problems both on and off screen. Straitjacket Sexualities: Unbinding Asian American Manhoods in the Movies looks to cinematic history to reveal the dynamic ways Asian American men, from Bruce Lee to Long Duk Dong, create and claim a variety of masculinities. Representations of love, romance, desire, and lovemaking show how Asian American men fashion manhoods that negotiate the dynamics of self and other, expanding our ideas of sexuality. The unique ways in which Asian American men express intimacy is powerfully represented onscreen, offering distinct portraits of individuals struggling with group identities. When will American poetry and poetics stop viewing poetry by racialized persons as a secondary subject within the field? Dorothy J. Wang makes an impassioned case that now is the time. Thinking Its Presence calls for a radical rethinking of how American poetry is being read today, offering its own reading as a roadmap. While focusing on the work of five contemporary Asian American poets--Li-Young Lee, Marilyn Chin, John Yau, Mei-mei Berssenbrugge, and Pamela Lu--the book contends that aesthetic forms are inseparable from social, political, and historical contexts in the writing and reception of all poetry. Wang questions the tendency of critics and academics alike to occlude the role of race in their discussions of the American poetic tradition and casts a harsh light on the double standard they apply in reading poems by poets who are racial minorities. This is the first sustained study of the formal properties in Asian American poetry across a range of aesthetic styles, from traditional lyric to avant-garde. Wang argues with conviction that critics should read minority poetry with the same attention to language and form that they bring to their analyses of writing by white poets.

In this far-ranging study Hongmei Sun discusses the thousand-year evolution of this figure in imperial China and multimedia adaptations in Republican, Maoist, and post-socialist China and the United States, including the film Princess Iron Fan (1941), Maoist revolutionary operas, online creative writings influenced by Hong Kong film A Chinese Odyssey (1995), and Gene Luen Yang's graphic novel American Born Chinese. At the intersection of Chinese studies, Asian American studies, film studies, and translation and adaptation studies, Transforming Monkey provides a renewed understanding of the Monkey King character as a rebel and trickster, and demonstrates his impact on the Chinese self-conception of national identity as he travels through time and across borders.

Asian Americans are often portrayed as "model minority", yet their personal and educational experiences are often unheard. In this book, 10 Asian American higher education educators and scholars presented their realistic pictures in American higher education by through their personal narratives. The contributors in this book come from different regions and teach in different colleges and universities; and coincidentally, they all endure the "outsider" category formerly as students and now as professors and leaders. This "outsider" status can be emotionally overwhelming and psychologically unnerving. This status hampers opportunities for Asian Americans to grow and maximize their fullest potential. Though they develop different strategies to address their to address their "outsider" label, it is does not make it comfortable. But, time and time again, they have proven that they can succeed! In this technological age, we must value unending truths as we educate ourselves and others. We hope the book can be an educational and informational resources for administrator and faculty in higher education and educational policy makers"--
